Cascada Marbella welcomes the spring with a renewed gastronomic proposal

Marbella, April 2, 2025 – Cascada Marbella welcomes spring with a renewed gastronomic proposal. Brothers Jacques and Mathieu Lagarde present a seasonal menu that reflects their commitment to honest, natural and creative cuisine, without unnecessary artifice. This new menu is a celebration of fresh and carefully selected flavors, accompanied by a constantly evolving wine list that guarantees the perfect pairing for each dish.

Among the gastronomic novelties, the homemade sausage stands out, made with a mixture of pork and veal seasoned with oregano, enriched with the creaminess of goat brie and a sweet touch of raisins, balanced with a green leek aioli. Another proposal is the “Hierbas a Tortuga” sirloin steak, accompanied by a veal juice infused with a classic herb mixture created by chef Auguste Escoffier, which adds depth and elegance to the dish. It is served with a pea puree that balances the flavors with a subtle sweetness.

The menu also includes options such as Mediterranean vegetable confit, a cream of mushroom soup accompanied by sautéed oyster mushrooms and a crunchy touch of fried parsley, and a fresh salad combining treviso, frisée and lettuce with a caramelized lemon and honey dressing, pickled onion and mustard seeds.

Cascada tasting menu

As part of the “farm to table” concept, Cascada Marbella offers a tasting menu inspired by a fusion of traditional and avant-garde techniques from various regions of the world. This gastronomic experience consists of five passes and is priced at 85 euros, with the possibility of adding a selection of charcuterie for 20 euros and a wine pairing for 30 euros. This menu is designed to be enjoyed by everyone at the table.
